A new recognition for regional heritage and a highlight at TAVOLA for EUROFOODART

Liège White Pudding has obtained the Protected Geographical Indication (PGI) label, highlighting artisanal know-how and a local supply chain. It will be showcased alongside other Walloon PDO & PGI products at TAVOLA 2026 in Kortrijk from 15–17 March, as part of the EUROFOODART campaign.

The recognition dates back to November, but it is still worth highlighting: Wallonia now has a new flagship product officially recognised by Europe. The Liège White Pudding PGI joins the family of products benefiting from a Protected Geographical Indication. This recognition goes far beyond a simple label, as it celebrates a historic know-how, a revitalised production chain and a strong regional identity.

Another point worth mentioning is that this news will be at the heart of EUROFOODART’s presence at the TAVOLA trade fair, which will take place from 15 to 17 March 2026 in Kortrijk. Naturally, other PGI and PDO products from our regions will also be highlighted during the event.

 

A PGI highlighting Liège craftsmanship

The PGI label distinguishes products whose characteristics are closely linked to a specific geographical area. For Liège White Pudding, this recognition is based on several key elements:

  • A traditional recipe based on lean pork meat and pork fat.
  • The exclusive use of natural casings.
  • And above all, the signature ingredient: marjoram (Origanum majorana L.).

This marjoram, grown in open ground, harvested before flowering and dried according to a strict protocol (controlled temperature, storage protected from light, and selection of whole leaves), lies at the heart of the product’s aromatic identity. Its delicate incorporation into the mixture requires genuine artisanal expertise, passed down from generation to generation by Liège butchers and charcutiers.

Beyond the product itself, the PGI rewards a collective effort launched in 2014 by professionals from the Province of Liège, in collaboration with Walloon agricultural and institutional stakeholders. It now brings the number of Walloon PDO and PGI-labelled products to sixteen.

 

EUROFOODART at TAVOLA: promoting excellence and culinary heritage

In this particularly positive context, EUROFOODART will be present at TAVOLA 2026 to highlight this major recognition and, more broadly, Belgium’s gastronomic heritage.

Within the food sector, TAVOLA is widely recognised as a benchmark event for premium food products and fine specialties. It is therefore only logical for the EUROFOODART campaign to be present there. This participation reflects a clear ambition: to promote authentic products that carry meaning and are deeply rooted in their territories, at a time when professional buyers are increasingly looking for transparency, origin and quality.

At TAVOLA, EUROFOODART will place this new PGI in perspective with current market dynamics: premiumisation, the search for authenticity, and the valorisation of local supply chains.
